From 24/7 security to being monitored by hundreds of policemen, cooking for the President of India is a big deal.
Chef Ajay Chopra, who recently cooked for President Pranab Mukherjee, got talking with IFN about his experiences - the menu, the protocol and finally the applause he received from the President himself.
“Every meal that is cooked for the President, is prepared with utmost care and scrutiny. With proper rehearsals for the dinner to synchronised walks by the servers, everything needs to be just right,” he says.
The highlights of the state banquet meal were obviously Bengali dishes like aloo poshto, cholar dal and an array of mishti or sweets like sandesh and chomchoms keeping in mind President Mukherjee’s preferences.
“He is very fond of food, but he likes it to be spicy, yet not hot and it also needs to be a little overdone than the usual, ” chef Chopra adds.
