Lockdown Recipe: No Maida No Sugar Pancakes

It's the 16th day of quarantine & the 9th day of lockdown and I'm already craving for desserts. Staying at home constantly & not stepping outside definitely needs a mood elevator. But, in that process, I do not wish to gain weight either! And, these pancakes inspired by Shivesh Bhatia's version of oats pancakes became the answer to my greedy cravings! Nutritious, healthy & extremely delicious, these pancakes have become my go-to dessert recipe. And, can you believe that it has absolutely no maida nor sugar!

What I really love about this recipe is that it's a one-pot mix recipe that requires only a mixer & a non-stick pan. This dish is one of those breakfast recipes that can be enjoyed during dinner too! A gluten-free recipe, it is a wholesome & fulfilling recipe that even a beginner can easily make at home.

Here's a step-by-step guide to making these no maida, no sugar pancakes while you're experiencing a down-time during this lockdown. I could make about 8 pancakes with the measurements used below.

Ingredients:

1/2 cup Oats

3 ripe Bananas

1 tbsp Baking Powder

2 Eggs

1tsp Cinnamon

1 tsp Salt

1/2 cup Oil

1 cup Milk

How to make No Maida No Sugar Pancakes:

Step 1: Take a mixer, add 1 cup rolled oats. (I used Quaker oats).

 

Step 2: Add 3 ripe bananas.

Step 3: Now, add a tablespoon of baking powder.

Step 4: Add 2 eggs. Make sure they're at room temperature. If you don't eat eggs, you can substitute it with a flax egg. To replace one egg, you need to blend 1 tbsp of flax seeds with 2.5 tbsp of water. I've used 2 eggs, so could double the quantity. If you don't have flax seeds, just add an extra teaspoon of baking powder instead.

 

Step 5: Add, a teaspoon of cinnamon powder. (optional)

 

Step 6: Add a teaspoon of salt. Salt accentuates the flavour of the bananas in the pancakes.

Step 7: Add 1 cup milk & 1/2 cup oil & whisk into a smooth blend.

Step 8: Take a 1/2 measuring cup, fill it till the brim & place on a buttered non-stick pan.

 

Step 9: Add chocolate chips (Optional). You can add fresh fruit pieces at this moment if you like.

 

Step 10: Cook evenly on both sides, flipping the pancake.

 

Step 11: Stack them up with a dollop of butter & more chocolate chips. Enjoy!

It is indeed the tastiest way to make your breakfast count!
