Fenugreek and Potato Vegetable

Method
- Heat 3 tbsp oil
- Once the oil is hot, add ginger-garlic paste
- Add green chillies
- Stir well
- TIP: Fry the ginger-garlic paste for 1 minute
- Add the chopped methi (fenugreek) leaves
- Mix well
- Add chopped tomatoes
- Mix for 1-2 mins
- TIP: Cook tomatoes till they soften
- Once the tomatoes soften, add 1/4 tsp turmeric powder
- Add 1/2 tsp red chilli powder
- Add 1 tsp coriander powder
- Mix well
- Cover with a lid, to allow the masala to cook for a few minutes
- Use a blender to smoothen the masala
- Now, add the boiled potatoes
- Add salt to taste
- Mix well
- Ensure every piece of potato is well coated with the masala
- Cover with a lid for 5 mins
- Ready to serve
