Raddish and Bringal dry vegetable

Process:
- Heat 3 tbsp cooking oil in a kadhai/deep cooking pot
- Add the ginger
- Add green chillies and stir
- Once the ginger and chillies are sautéed, add the radish
- Stir and sauté for a couple of minutes
- Tip – This difference in cooking time will make sure all the vegetables are well and evenly done
- Add the brinjal and mix well
- Add the turmeric powder
- Dhania/coriander powder
- And the chilli powder
- Mix well
- Add the chopped tomatoes and mix well
- Add salt
- Half of the chopped coriander leaves
- Mix well once more, cover and cook on a low flame for 5-7 min
- Tip – Check if your vegetables are done by piercing a piece with a knife or fork
- Ready to serve
- Tip – Serve with hot rotis and curd or rice and dal
