Burmese Khowsuey

Procedure
- Heat a wok
- Add ½ tbsp oil
- Add finely chopped onions
- Sauté the onions until they turn pink
- Add the chopped bell peppers
- Sauté the peppers until they turn brighter
- Add the mushrooms
- Sauté until mushrooms leave a little water and change colour
- Add 2 tbsp of khowsuey paste
- Stir well and cook the paste
- Add little water
- Stir well
- Add the finely chopped tomatoes
- Stir well
- Add the coconut milk
- Stir well
- Add the assorted boiled vegetables
- Mix well
- Add salt as per taste
- Add 1 stock cube
- Add pepper as per taste
- Let the gravy come to a boil
For serving
- 1 bowl of boiled noodles
- ½ lemon juice
- Chopped spring onion leaves
- Crispy fried onions
- White of the spring onions, finely chopped
Plating
- Place noodles on to a plate
- Top the noodles with the curry
- Garnish with chopped white spring onions, spring onion greens crispy fried onions
