- Cut the zucchini into quarters
- Scoop out the seeds and flesh
- Put the zucchini flesh into a blender
- Add the carrots, garlic, tomato puree, onions, parsley, black pepper and salt
- Make the puree to a chunky consistency
- Season the hollowed out zucchinis with salt and olive oil
- Fill them with the pureed vegetables
- Add a layer of paneer
- TIP – Instead of paneer you can use any other topping of your choice
- Bake at 180 degrees for 15mins
- Top off with tomatoes & bake for another 10 min
- Your stuffed zucchini is ready to serve!
