Stir Fried Vegetables With Sesame Soba Noodles

Heat a wok
Add 2 tsp sesame oil
Add half of the ginger and garlic
Add a couple of tbsp of water or vegetable stock and boil
Add spring onion
Add the vegetables
Add 2 tsp soya sauce
The crushed stock cube
Salt and pepper
Stir well
Add 4-5 tbsp water to the corn starch and mix in a glass
Tip -- Make sure the corn starch is totally dissolved
Add a few tbsp more of stock or water and the corn starch syrup to the stir fried vegetables. Stir and bring to a boil.
Tip -- Retain a little liquid in the vegetables and keep them crunchy
Once the stew has thickened, add the chilli oil
Tip -- You can use toasted sesame oil instead of chilli oil
Add a handful of spring onion leaves and set aside
Heat the wok
Add 2 tsp of sesame oil
Once the oil is hot, add the remaining ginger and garlic
Add some water and boil
Add 2 tsp soya sauce
Spring onion leaves
Salt and pepper
Add the soba noodles
Toss them around on a reduced flame
Tip -- You can add some water if the noodles get too dry
Add some of the mixed sesame seeds
Plate with stir fried vegetables and garnish with spring onion
Ready to serve
