Spinach Raita
Raita is a healthy accompaniment to any meal. Simple and delicious, it has found its way to dinner tables across India. In this video, Veena presents her version of a very healthy and tasty raita recipe-the spinach raita!

- In a pan add 1 cup of water
- To this, add the chopped spinach
- Once the water comes to a boil, lower the flame
- Allow the spinach to boil for about 5 minutes
- Once the spinach has boiled well, turn off the flame
- Allow the spinach to cool down
- Drain excess water out of the spinach
- Put dahi in a big bowl
- Using a spoon, blend the dahi well
- Once the dahi forms a smooth paste, add spinach to it
- Mix the ingredients well
- Add salt as per taste
- Mix again
- Taste the mixture once to ensure that salt has been added in correct proportion
- Add a pinch of sugar if the mixture tastes sour than usual
- Mix the ingredients well
- Transfer the ingredients into a fresh bowl
- Garnish the raita with about 1 tsp jeera powder, ¼ tsp red chilli powder and ¼ pepper powder
- Top it up with handful of coriander leaves
- The raita is now ready to serve
