Procedure:
- Heat a wok
- Add oil
- Add he strips of bell peppers
- Toss them around
- Squeeze out water from potato and spread an even layer on the bell peppers
- Sprinkle salt and pepper
- Mix well
- Spread out a layer back on the wok like a pancake
- Let it cook for 10-15 min depending on the variety of the potato
- Check if the bottom layer is catching colour
- Carefully turn and let the reverse side cook
- TIP: Flip the potato roasty in a plate and slide in from the uncooked side
- Sprinkle some grated cheese
- Tip: keep checking on the other side to catch colour
- Ready to serve
