Aloo Sabzi, the most common sabzi to be prepared in a normal North Indian household

- Peel the boiled potatoes
- Heat 2 tbsp oil, let the oil heat well
- For the tadka: Add 1/4 tsp asafoetida (hing)
- 1 tsp mustard seeds (rai)
- 1 tsp cumin seeds (jeera)
- 2-3 chopped green chillies
- After adding green chillies put the flame on slow as the chilli flakes will splutter
- Add curry leaves
- Add 1/2 tsp turmeric powder (haldi) last to avoid it from turning black
- Add chopped coriander
- And now add all the potatoes
- Add salt to taste
- Mix well together
- Garnish with coriander on the top and some lime on the side
- Ready to be served
