Coriander Rice By Preetha
Treat yourself to a refreshing meal this festive season with Coriander Rice. THe essence of the recipe is freshly chopped coriander and more importantly the coriander stems. Like a lot of South Indian dishes, Coriander Rice too can be made in no time and tastes heavenly.

Heat oil in the pan
TIP: One can also use ghee instead of oil for a better flavour
Add mustard seeds
TIP: One can also add garlic as per their palette
Add urad dal
Add Chana dal
Add chillies
Add curry leaves
Add corainder stems
Mix well and cook for few seconds
Add chopped coriander leaves
Add rice
Mix well
Add salt
Cook for a couple of minutes
Ready to serve
TIP: You can process coriander the way you like, either by grinding it with the chillies or finely chopping it.
TIP:If finely chopping the coriander, use immediately to avoid darkening of the leaves. Else, place in water till used.
