Palak Paneer

Heat the kadai/ deep frying pan
Add the onions
Add the chopped palak (spinach)
Cover the kadai/ deep frying pan with a lid and let the palak (spinach) and onions steam for 2-3 mins
Turn off the flame and blend the steamed palak (spinach) to a fine paste
TIP : Add a spoons of water to smoothen the paste
Heat the kadai/ deep frying pan
Add 3 tbsp of vegetable oil
Add ½ tsp of mustard seeds
Lower the flame once the mustard seeds start to splutter and add the ginger garlic paste
Add the green chillies
Stir well
Add the grated tomatoes
Cook the tomatoes well
Add ¼ tsp of turmeric powder
Add 1 tsp of coriander powder
Stir well
Once the water in the tomatoes dried up blend them with a hand blender
Add the grounded spinach
Mix well
Cover the kadai/ deep frying pan with a lid and let it cook for 3-4 mins
Add the diced paneer cubes (cottage cheese)
Add salt as per taste
Mix well
Cover the kadai/ deep frying pan with a lid and let it cook for another 2 mins
Serve hot with chapattis
