Procedure:
- Drain excess water out of the moong dal after soaking it for about 1 ½ hours
- Place ginger in a grinder
- Add the green chillies
- Add the soaked moong dal
- Grind all the ingredients together
- Transfer the paste into a bowl
- Mix other spices into the dal paste
- Add ½ tsp ajwain seeds
- Add ¼ tsp shah jeera
- Add ¼ tsp red chilli powder
- Add Salt as per taste
- Add 1 pinch of soda bicarb
- Add the coriander leaves
- Mix all the ingredients well
- Heat oil in a pan
- Roll the kachoris and place them on the oil one by one
- Keep turning the kachoris around until they have turned golden brown in colour
- The kachoris should be crisp on the outside and soft inside
- Fry the kachoris on medium flame for them to cook properly
- Kachoris are ready to serve
