Khatta Dhokla

- Add the sour yogurt into the dhokla flour
 - Add 1/2 tsp each of fenugreek seeds and sugar
 - Mix well
 - Cover the batter with a lid and keep it in a closed cupboard for 6-8 hours for fermentation
 - Add 1 tbsp of ginger chilli paste
 - Add 1/2 - 1tsp of salt
 - Add 1 tbsp of white butter
 - Mix well
 - In 2 tbsp of warm water add 1tsp of lemon juice, 2 tbsp of oil and 1 tsp of fruit salt
 - Mix and add it to the dhokla mixture
 - Gently mix the mixture together
 - Use a stainless steel plate and grease it with little oil
 - Add 1/2 cup of batter into the plate
 - TIP: If one wants a thin dhokla reduce the quantity of the bater and for a fatter dhokla, add more batter
 - Sprinkle some black pepper and red chilli powder to garnish
 - Steam the dhokla for 5-7 mins
 - Open the lid and with light fingers touch and check on the dhokla
 - Sprinkle few drops of water
 - Use a flat spoon to cut the dhokla into squares or diamonds
 - With a sharp flat spoon lift out the dhokla
 - Plate and serve the Dhokla
