Kerala Style Soft Puttu
Pattu is a steamed rice cake cooked with freshly grated coconut. It's extremely popular in Kerala and can be relished with kadala curry, egg curry, and even ripe bananas.

Dry roast the flour on low flame till it loses all moisture.
Keep aside to cool. Combine flour with salt and very little coconut, add water, little by little and make sand texture mixture.
Place water for boiling in puttu chatti.
Sprinkle 1 tbsp coconut on the base of the mold and top with rice mixture.
Alternate this with more of rice and less of coconut till mold is full.
Place on puttu pot and steam on low flame for 10 minutes or till done.
Demould and serve.
TIP: To make rice flour, Soak rice in water for 1 hour.
Drain off excess water and dry till it is 99% dry.
Grind to a semi-fine flour.
