Procedure:

  • Heat oil in a deep pan
  • Add water to coconut powder, to make coconut milk
  • TIP: Use a whisk to mix the coconut powder and water
  • Add onions
  • Sauté the onions until they turn translucent
  • Add the green chillies
  • Add all the spices such as the bay leaves, star anise, cloves, black pepper corn and cinnamon stick
  • Stir well
  • Add the chicken
  • Add the beans
  • Add the potatoes
  • Once the chicken has partially cooked for about 10-15 mins add the coconut milk
  • TIP: Coconut should not be too thick or too thin
  • Add salt as per taste
  • Let the chicken boil and then simmer with a lid on for 20 mins
  • Serve hot with steamed rice
