Kaju Katli
Kaju Katli aka Kaju Barfi !!! One starts drooling just after hearing the name of Kaju Katli Mithai. But why be dependent on sweet shops to have one.

In a saucepan, add 1/2 cup water.
Add sugar (double the quantity of water taken).
Boil both together, to make it one.
TIP: When a drop of the sugar syrup, falls like a thin string, the syrup is considered ready.
TIP: In a mixer, blitz pieces of cashews in batches. Strain to get clean and fine grained cashew powder.
Add cashew powder to the sugar syrup.
Mix well, till a dough is formed.
On a plastic sheet, place the cashew dough.
Cover the cashew dough with another piece of plastic on it.
TIP: Roll the dough to a thickness of 1/2 cm
When applying the silver virk, keep the fan off
TIP: Make the pieces when the cashew dough is warm.
After applying the silver virk, cut it into diamond pieces.
