Ganesh Chaturthi Special: Sweet Fried Fritters

Method:
- Heat 1 small bowl of ghee, 1 small bowl of water, 1 small bowl of sugar and a pinch of salt
- TIP: Avoid adding milk as this sweet preparation will get spoilt
- Transfer the liquid mixture into a plate to cool
- As the liquid mixture cools, heat oil for frying
- Once the mixture has cooled, add gram flour and knead into a dough
- TIP: Roll out the dough immediately because the addition of ghee tends to make the dough hard if kept aside for long
- To roll out the dough:
- Make flat dough balls and roll them out into chapatis
- TIP: Do not use any flour while rolling
- TIP: Do not roll the chapati to thin or too thick
- Cut the uneven edges of the chapati with a cutter
- Once the dough is rolled out, use a cutter to cut the shankar para into square shapes
- TIP: To test if the oil is heated, throw in a piece of dough. If it rises, the oil is ready for use
- Once the oil is heated, start frying the pieces
- TIP: Once shankar paras have fried, reduce the flame before removing it to ensure the oil remains heated for the next batch to fry
- Remove the shankar paras on a tissue to get rid off the excess oil
- Ready to serve
