- Score the chicken
- TIP: Scoring means to make cuts on the meat, in this case chicken
- TIP: Scoring the chicken ensures the marinate seeps well inside
- TIP: Scoring can be done with any meat when marinating
- Score the chicken on both sides
- Add 1 bowl of curd
- TIP: Curd acts as a tenderiser and hence is used in marinations
- TIP: You can use fresh curd or packaged curd
- Now add 1 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp cumin powder
- 1 tsp garam masala powder
- 1 tsp kashmiri chilli powder
- 1 tsp black pepper powder
- And add salt to taste
- Mix all the ingredients together
- Once mixed, start coating the chicken with the masala
- TIP: Ensure the masala penetrates the scores made to pack the flavours in the chicken
- Turn the chicken and coat it with the marinate
- TIP: Ensure both the sides of the chicken are coated with the marinade
- TIP: Use a flat surfaced as it gives space when marinating meat
- Coat the second chicken piece in the same way
- Keep aside
