1. Sprinkle some salt on the surmai, along with some red masala, crushed garlic and spread this evenly on the fish.

2. Roll the surmai fish from each side in the mixed flour to get a perfect coating on the fish.

3. Keep aside and repeat the process with the remaining fish pieces.

4. In a heated pan, add in oil and fry the fish well on both sides. Garnish and serve.
