A treat to the eyes, refreshing to taste and a bowlful of health, Carrot Kosmiri is a typical south Indian salad made with carrots, coconut, chillies and tempered with crackling mustard.

Method:

1. In a large bowl, add the carrots, hing water, moon daal, coconut, chillies and salt and mix well.

2. In a heated pan, add in oil, mustard seeds and mix. Add in curry leaves, mix and turn off the flame.

3. Add in the tadka and lemon juice to the salad. Mix and serve.
