Apricot Balls Recipe

Method:

- Place the blanched almonds in a food processor and pulse until they turn to fine crumbs.

- Add in the Oats, Almond extract and Apricots and pulse again until the mixture becomes sticky and starts to clump together.

- Place the shredded coconut on a plate. Scoop out a heaped teaspoon of the apricot mixture and roll a ball into your hands.

- Roll it in the shredded coconut and place on a plate or tray.

- Ready to serve.
