Born and raised in Rome, chef Francavilla has curated eight risottos from eight regions of his home country for Mumbai diners. The risotto specials coincide with Giro d’Italia, a popular bicyle race in Italy, which travels from one region to another. Florence, Rome, Naples, Milan, Bologna, Perugia, Cagliari and Sicily are the places that have inspired the menu.
