Mushrooms are very versatile and easy to cook with.
Until a few years ago, finding quality mushrooms was rare in India. Today, you can find them at every local vegetable vendor. You can make salads, curries and even kebabs with mushrooms. What's more, it is easy and fast to cook.
With the New Year ahead, try these recipes out for friends and family.
Mushroom Stir Fry
Friends coming over without any notice? Don’t worry as you can whip up this recipe in no time. Start by washing and slicing the mushrooms into thin slices. In a hot pan, add oil, garlic, ginger, chopped onion and sauté. Add the mushrooms along with a little soy sauce, salt and pepper. Mix well and let them cook. Top it off with chopped nuts and spring onion. Serve hot.
Mushroom Samosa
Make this desi favourite by replacing the potato filling with mushrooms. To make the stuffing, heat some oil and add cumin seeds, coriander seeds and mustard seeds. Let them crackle. Add some chopped onions, carrots, mushrooms and peas. Sauté well. Now add chilli powder, turmeric powder, coriander powder, salt, pepper and mix well. Once cooked, fill it in a samosa patti and deep fry. Serve with chutney.
Sausage Stuffed Mushrooms
This easy recipe makes for a great appetiser at a house party, and with New Year almost here, this shall come in handy. Take the mushrooms and cut off the stem and create a small hollow space at the bottom of the mushroom top. In a heated pan, add in olive oil, garlic, chopped sausages and sauté. Add oregano and parsley and mix well. Put small portions in the mushrooms, and garnish with chopped coriander.
Mushroom Soup
This classic mushroom recipe is hard to resist, specially in winter. In a pan add oil, garlic, chopped onions and chopped mushrooms. Sauté for a while and put salt, pepper, chilli flakes and vegetable stock. Add a teaspoon of cornflour until the mixture becomes thick and pour in some cream. Mix well, garnish and serve.
Mushroom Tikka
For everyone who loves Indian food, these mushroom tikkas are perfect. Start by washing and cleaning the mushrooms well. Add ginger and garlic paste, chilli powder, salt, pepper, turmeric powder, carom seeds, cumin seeds and oil. Mix this well and let the mushrooms marinate for a while. You can put some cornflour and mix again. Put these through skewers and grill. Serve with a chutney, some lime and onions.
