Edited excerpts.

In your view, what are the primary factors driving the rising consumption of mushrooms as a sustainable alternative to meat in India?
The rising consumption of mushrooms in India is driven by a shift towards sustainable living, especially among millennials and Gen Z in urban centers like Bengaluru, Delhi, and Mumbai. Post-pandemic, health, wellness, and environmental consciousness have become priorities, fueling interest in plant-based diets. Mushrooms, being nutrient-dense, protein-rich, and eco-friendly, have emerged as a popular alternative to meat.
The influence of Asian cuisines that heavily use mushrooms, exposure to global foods through travel, and local production of varieties like shiitake and oyster mushrooms have made them more accessible and appealing. Influencers and content creators have further highlighted their health benefits, helping integrate mushrooms into everyday diets. At Nuvedo, we see mushrooms as nature's recyclers—offering a low carbon footprint and rich nutrition, making them an ideal choice for a modern, conscious diet.

How does Nuvedo educate consumers on the nutritional benefits of mushrooms, especially in comparison to traditional meat sources?
At Nuvedo, we educate consumers on mushroom nutrition through workshops, foraging walks, and growing kits, offering hands-on learning and online resources like blogs and videos. Each kit includes a QR code leading to information on mushroom cultivation and health benefits. We also partner with health professionals to promote mushrooms' advantages, such as their protein content, vitamins D and B, and immune-boosting beta-glucans. While we don't market them as direct meat alternatives, we highlight their lower environmental impact. Research, including studies from institutions like Harvard Medical School and Tohoku University, supports the role of mushrooms like Lion’s Mane and Cordyceps in improving cognitive function and immune health, reinforcing their value as a sustainable, nutrient-rich choice.

What specific challenges have you encountered in promoting mushrooms as a mainstream food choice, and how have you addressed misconceptions about their cultivation and use?
At Nuvedo, we address misconceptions about mushrooms and promote them as a mainstream food choice through several initiatives:

  • Growing Kits: These provide hands-on experience in cultivating mushrooms in a clean, controlled environment, making the process approachable and educational.
  • Urban Foraging and Workshops: Foraging walks and cultivation workshops teach people how mushrooms can be safely harvested and grown, dispelling fears of toxicity and demonstrating their versatility in daily life.
  • Indian Recipes: Our YouTube recipe collection showcases mushrooms in traditional dishes like Mushroom Biryani, countering the belief that they only suit certain cuisines.
  • Shroom Sabha Community: We built a community of enthusiasts to spread accurate information, fostering a deeper connection to mushrooms' benefits.
  • Health Education: Partnering with health professionals, we promote the benefits of mushrooms like Lion’s Mane for cognitive health and immune support, highlighting their role in wellness and disease prevention.
  • Art Projects: Using art, like the Mycobloc Chair, we creatively engage the community, sparking curiosity about mushrooms.

Additionally, we highlight mushrooms' rich umami flavor, which can serve as a satisfying meat replacement in various dishes. This quality, combined with their low sodium and fat content, makes mushrooms ideal for those seeking a nutritious yet flavorful alternative.

How do you see the role of mushrooms evolving in the future of plant-based diets, particularly as more people seek sustainable food options?
As the plant-based diet movement expands, mushrooms are becoming vital for sustainable eating. Thriving in diverse environments with minimal resources, they contribute to natural recycling by breaking down organic material. Research shows that mushrooms require less water and land than traditional crops, positioning them as key to regenerative food systems.
At Nuvedo, we see mushrooms as more than just meat substitutes; their rich umami flavor enhances plant-based diets while promoting health. They improve nutrition through mycelium-based fermentation, increasing sweetness and reducing gluten content. Varieties like Lion’s Mane, Reishi, and Cordyceps also support mental and physical health, making mushrooms valuable for longevity. By optimizing resources through mushroom cultivation, we envision a future where fungi address health and environmental challenges.

What changes have you implemented in your business model or product offerings to better align with the growing demand for sustainable food alternatives?
At Nuvedo, we focus on making mushrooms a daily health booster. Our product line includes potent extracts from functional mushrooms like Lion’s Mane, Cordyceps, and Reishi, designed to support focus, sleep, and stress reduction. To do so, we've become fully vertically integrated, handling everything in-house to reduce our carbon footprint and ensure quality control. Utilizing our patent-pending Ultrasound-Assisted Extraction (UAE) technology, we achieve faster, more efficient, and sustainable extraction methods. We source locally for mushroom cultivation, supporting sustainable agriculture and reducing emissions. Our collaborative approach leads to partnerships with brands in coffee, kombucha, and chocolate, making mushroom benefits accessible in beloved products.

What key takeaways from your experience on Shark Tank have you applied to enhance Nuvedo’s brand and mission?
From our Shark Tank experience, I learned the importance of clear communication and aligning with investors who understand our vision. At Nuvedo, we’re nurturing a movement focused on sustainability and wellness. The Sharks' feedback sharpened our focus on decisions that reflect our core mission. Their misconceptions about mushrooms highlighted the need for greater education about their benefits and applications.
I seek investors who share our values and prioritize long-term sustainability over immediate profits. Mushrooms are essential to our ecosystems, and by championing them, we invest in a healthier future for the planet and our communities. Let’s invest wisely in Earth’s future.

Can you share any success stories from customers who have transitioned to using mushrooms as a meat substitute through your products?
One inspiring success story comes from Kareene, a long-time Nuvedo customer who began her journey with our mushroom-growing kits. Initially seeking alternatives to common supermarket mushrooms, she enjoyed growing her own and eventually transitioned from pre-made kits to creating her own cultivation setups. Kareene transformed part of her home into a small-scale mushroom farm, growing various types and incorporating them into her diet.
Her innovation is noteworthy—she dries and powders our King Tuber Oyster mushrooms to enhance her cooking, receiving praise from family and neighbors. Kareene's story exemplifies the health benefits and personal growth that mushroom cultivation can foster.

By focusing on education, collaboration, and community engagement, Nuvedo is paving the way for a healthier food system that addresses both human well-being and environmental challenges. It is time for you to say yes to mushrooms!
