Two polar opposite things that have taken over the internet this week. One is all the vegan, healthy, green juice dripping content and second, galette des rois, a flaky cake made with puff pastry and a frangipane centre, which typically comprises almonds, butter, eggs and sugar.
Our cover story falls in the former category, featuring Bollywood star Genelia Deshmukh and gives you a full lowdown on her and husband Riteish's vegan brand Imagine Meats. That's how we kicked off Veganuary at IFN.
Keeping with that tone, there's a multitude of things to check out. Firstly, there's a starter-kit of sorts with vegan experiences and communities, which is perfect for the uninitiated; a short primer on vegan pantry staples and also, a posh pink vegan pasta recipe that I am surely trying at home.
Because January is all about newness, we compiled a list of the coolest and new healthy menus available in Mumbai right now. Besides that, if you're looking to replenish your spice shelf, definitely look here; it has all the details on some of the freshest homegrown brands from the country. There's also a nolen gurer rosogolla recipe that's focussed on showing Instagram's current favourite galette its place.
Pair these ideas with a weeknight-friendly and easy peasy frittata recipe, which comes with a desi twist.
I'm going to sign off with a dish, which you may love or hate. Though the Squid Games obsession has faded, our love for the show hasn't. These parathas (yes, you read that right), are themed around the show. Great to get beet and greens into your kid's belly.
