Kadai Chicken

Procedure:
- Heat the mixed oil and ghee
- Add the chopped onions
- Add the bay leaves
- Stir well until onions are soft and light golden brown
- Add the ginger-garlic paste
- Stir well
- Add the salt
- Add red chilli powder
- Add haldi (turmeric powder)
- Add half of the garam masala powder
- Add half the coarsely grounded dry masala
- Stir well
- Add the chopped tomatoes
- Stir well
- Add the tomato puree
- Stir well
- Add a few coriander leaves
- Break and add 1 green chilli
- Let the masala cook for a few minutes
- Add the chicken pieces
- Coat the masala nicely on to the chicken pieces
- Let the chicken cook for 5-7 mins
- Add ½ cup of water
- Stir well
- Cover the chicken with a lid and let the chicken cook for 20-25 mins
- TIP: Check the chicken at regular intervals to know when it’s completely cooked
- TIP: Poke a knife through the chicken to check if its cooked
- Add the remaining grounded dry masala
- Add the remaining garam masala
- Add a few juliennes of ginger for garnish
- Add handful of diced capsicum
- Add a few coriander leaves
- Mix again and serve
