Gaajar Ka Achar

Instructions:
- Add green garlic to the bowl of green carrots
- Add ½ tsp red chilli powder
- Add ¼ tsp turmeric powder
- Add ½ tsp mustard seeds (coarsely ground)
- Add salt as per taste
- Mix all the ingredients together
- Pour the mixture into a jar
- Allow the contents to ferment over 36-48 hours
- Placing the jar in sunlight will help the mixture mature faster
- TIP: It tastes best fresh, so finish it in 3-4 days
