Talk of India's most loved fast food items and you just cannot ignore bhurji. Another variation of this popular dish but with a small vegan twist, the tofu bhurji is simply awesome! So, stay tuned!

- Heat oil in a pan
- Once the oil is heated, add the green chillies and the garlic
- Add the chopped onions
- Stir the onions till they turn golden brown in color
- Add the chopped tomatoes
- Add the capsicum
- Add the spring onions
- Stir the ingredients once
- Add the turmeric powder
- Add salt as per taste
- Add a pinch of the pink salt
- Crush the tofu before putting it on the pan
- Stir the ingredients around
- You can also add vegetables like corn, baby corn, mushroom, or red and yellow capsicum
- Stir the ingredients well
- Cook the bhurji for about 2 minutes
- The bhurji is now ready to serve
