Recipe: Birthday Special Nolen Gurer Payesh

Rice pudding with freshly harvested date-jaggery is a Bengali specialty. This is generally made during birthdays, but you don't have to wait till your birthday to make it.
Method:
1. Wash rice and keep aside.
2. Boil the milk in a heavy bottomed pot
3. Add the rice and simmer till the rice get cooked in the milk (the
process will take around 15 mins)
4. Add the nolen-gur, mishri, cashew and raisins and bring to a boil. Simmer till the milk mixture thickens. Served best chilled.
{Note: Mishri prevents the payesh (kheer) to cuddle. Sometimes
impurities in the gur tends to cuddle the milk. Mishri has the
property to prevent the milk from cuddling}
