Puran Poli

  • For the puran (inside filling):
  • In a pan, add 1/4 kg sugar
  • To cook chana dal: Soak the chana dal for 1-2 hrs in water. In a pressure cooker, add the soaked dal with water and cook it upto 3 whistles.
  • TIP: Strain the dal of any residual water
  • Now add the cooked chana dal to the sugar
  • TIP: This mixture can also be made with jaggery or half sugar and half jaggery together
  • Mix well to form a uniform mixture
  • In a bowl, add 1/4 kg all purpose flour
  • Add salt as per taste
  • Add 3-4 tbsp of oil
  • Add water as per requirement
  • Knead well to form a soft dough
  • TIP: Once the dough is formed, keep it covered for 15-20 mins. If the dough formed is hard, keep it covered for an hour
  • Constantly stir the chana dal and sugar mixture on a high flame to ensure it doesn't burn
  • TIP: If the chana dal and sugar mixture isn't uniform, then put it in the mixer to obtain a smooth filling and dry it in the pan
  • Cool the chana dal and sugar mixture for a few minutes
  • Once the mixture has cooled, add cardamom and nutmeg powder as per taste
  • Mix well
  • Heat a griddle
  • First, make a medium size ball of the puran (inside filling)
  • Make a ball of the all purpose flour which is half the size of the inside filling
  • Dip the all purpose flour ball in maida
  • Envelope the filling (puran) in the maida ball
  • Flatten the ball after adding the filling
  • Sprinkle maida on the rolling board
  • With a light hand, roll the puran poli into a roti/chapati
  • Place it on the hot griddle
  • Ensure that the puran poli puffs and turns slightly red on both sides
  • TIP: Flip the puran poli only twice
  • You can fold it or serve as it is
