Puran Poli

- For the puran (inside filling):
- In a pan, add 1/4 kg sugar
- To cook chana dal: Soak the chana dal for 1-2 hrs in water. In a pressure cooker, add the soaked dal with water and cook it upto 3 whistles.
- TIP: Strain the dal of any residual water
- Now add the cooked chana dal to the sugar
- TIP: This mixture can also be made with jaggery or half sugar and half jaggery together
- Mix well to form a uniform mixture
- In a bowl, add 1/4 kg all purpose flour
- Add salt as per taste
- Add 3-4 tbsp of oil
- Add water as per requirement
- Knead well to form a soft dough
- TIP: Once the dough is formed, keep it covered for 15-20 mins. If the dough formed is hard, keep it covered for an hour
- Constantly stir the chana dal and sugar mixture on a high flame to ensure it doesn't burn
- TIP: If the chana dal and sugar mixture isn't uniform, then put it in the mixer to obtain a smooth filling and dry it in the pan
- Cool the chana dal and sugar mixture for a few minutes
- Once the mixture has cooled, add cardamom and nutmeg powder as per taste
- Mix well
- Heat a griddle
- First, make a medium size ball of the puran (inside filling)
- Make a ball of the all purpose flour which is half the size of the inside filling
- Dip the all purpose flour ball in maida
- Envelope the filling (puran) in the maida ball
- Flatten the ball after adding the filling
- Sprinkle maida on the rolling board
- With a light hand, roll the puran poli into a roti/chapati
- Place it on the hot griddle
- Ensure that the puran poli puffs and turns slightly red on both sides
- TIP: Flip the puran poli only twice
- You can fold it or serve as it is
