Nargisi Kofta

- Pour oil into a pan
- As the oil gets heated, start making the batter
- Put the minced chicken on a plate
- Add the potatoes
- Add the garlic
- Add the ginger
- Add the green chillies
- Add the salt
- Add the cumin powder
- Add the garam masala
- Add the pepper
- Add a little bit of the coriander leaves
- Mix the ingredients first with hand and then put them into a mixer grinder
- After a quick spin, the ingredients should form a fine paste
- Add the soaked and squeezed bread to the paste
- Sprinkle the mixture with some more of the coriander leaves
- Mix well
- Once the mixture is ready, grease your palms with oil
- Pinch out a portion of the batter
- Pat the pinched out batter on both sides till it attains the shape of a patty
- Put a boiled egg in the middle
- Cover the egg on all sides with the patted out mixture
- Tip: Make sure that the egg is covered completely on all sides
- Dip the nargisi kofta in a bowlful of beaten egg
- Tip: Dipping the kofta into egg is optional since the batter is moist already
- Roll the kofta in bread crumbs
- The kofta is now ready to go in for deep frying
- Put the kofta in the pan
- Fry it for a while
- Tip: Make sure that the kofta is not fried too dark. It should turn golden in color
