- In a large plate, add the flour (keeping 2 tbsps aside to roll puris)
- Add 1/2 tsp ground pepper and 1/2 tsp jeera powder
- Add 4 tsp oil and salt to taste. Mix well
- Tip: Oil makes the puris crisp
- Add water to knead the dough
- Beat the dough well to ensure it is soft and spices well blended
- Tip: Finish the kneading with a pat of oil for smoothness
- To roll the puris, make flat balls
- Dip the balls in the dry flour and roll into small circles
- Tip: Avoid using too much dry flour as it leaves a residue on the puri and spoil the oil
- To fry the puris, heat oil in a kadai (deep pan)
- Tip: To check if the oil is hot enough, throw in a bit of dough, if it rises immediately, the temperature is ready
- Gently drop one puri at a time, submerging it completely. Let it puff up and turn over till both sides are golden brown
- Drain the excess oil and dab with a tissue
- The puris are ready to be served
