Sindhi Masala Koki
Sindhis start their mornings with this hearty breakfast, also known as masala kokis.
1. Empty the wheat flour into a large plate
2. Add onions
3. Add 1/2 cup of ghee (clarified butter)
4. Add green chillies and coriander leaves
5. Add 1/2 teaspoon of salt
6. Add 1/2 teaspoon of black pepper
7. Mix all the ingredients
8. Add warm water at regular intervals to knead the mixture into a soft dough
9. Divide the dough into smaller portions
10. Heat the tawa on high flame
11. Once the tawa is hot, lower the flame and dab little ghee to make the koki
12. Flatten the dough by applying pressure between your palms
13. Place the koki on to the heated tawa and press it on the tawa to flatten it
14. Flip to cook from the other side, once the koki turns golden brown
15. Add a few drops of ghee (clarified butter) to fry the koki
16. Dab some ghee (clarified butter) on the other side as well
17. Serve hot with curd, pickle and roasted papad
