Sanha Pakora

Method

  • Mix besan with vegetables and spices and make a thick batter with a little water
  • The consistency should be of a very soft dough
  • Keep aside for a few minutes
  • Heat oil in a kadai
  • Take one tbsp of hot oil and add to the batter and mix well
  • Now take 1 tbsp of batter at a time and put into the kadai
  • Put 5 to 6 tbsp at a time
  • Fry on a high flame turning the pakoras with a sieve till they are lighly brown
  • Remove after draining oil completely
  • Allow it to cool a bit
  • Now break each pakora into two and put them back into the hot oil for a second round of frying
  • Turn around the pakora till they are a uniform rich, golden brown
  • Remove from oil and place on a tissue once again
  • Serve hot with chutney/ ketchup
