While the simple Zucchini gained recent popularity with the spirally vegetable noodles called the Zoodles, it actually entered the Indian market a few years ago. Cucumber loving people that we are, we got introduced to zucchini as the “Videsi Kakdi” compared to our usual “Desi Kakdi.”
It looked different, was darker in colour, longer in size and even tasted different. We ate it raw, added it to our pastas and lasagana and now we’ve also come in terms with the latest addition, Zoodles. The Zucchini has indeed come a long way from its "Videsi Kakdi" days and this National Zucchini Day, let’s talk about the different ways in which zucchini can make your favourite foods a little more healthy!
1. Bruschetta

2. Muffins

French fries definitely tops our list of favourite snacks and sides. This deep fried potato snack is definitely puts us in our comfort zone and we are sure the feeling is mutual for so many of us! We decided to replace the potatoes with zucchini fingers and baked them instead of frying and the outcome is DELICIOUS!
