We all love cake, but dread making it as it seems too tedious and especially if you don't own an oven at home. But, you don't really need an oven to bake a cake! It does sound a little unusual, but you can make all kinds of delicious cakes in your trustee pressure cooker. The outcome is equally satisfying as an oven-baked cake. Yes, you read it right. Here's how to go about it.
What you need:
1 cup flour
2 eggs
1/2 cup castor sugar
1 tsp baking soda
1/2 cup cocoa powder
2 1/2 tbsp oil/butter
1/2 cup milk
A pinch of salt
Method:
1. Pre-heat your pressure cooker just like you would an oven. For this, add in 2 cups of salt at the bottom of your pan and put the lid on the cooker, without the gasket (the rubber insulation) and the whistle. Let this heat up for around 2-4 minutes.
2. To make the batter, mix in all the wet and dry ingredients separately and then incorporate them together.
3. Take a well-greased cake tin and pour the batter inside it. Take a steel plate or any other flat steel vessel that is heat resistant and will create a barrier between the cake tin and the bottom of the pan, and place it inside the cooker.
4. Keep the cake tin on top of the steel plate and put the lid back on and let it cook for about 45 minutes on a medium to low flame until a skewer comes out clean.
5. Safely remove the cake tin from the cooker and let the cake cool down before you unmould it.
Tips:
1. Make sure there is no water in the pressure cooker.
2. The gasket and whistle need to be removed before you start baking.
3. Make sure the cake tin fits comfortably inside your pressure cooker without the sides touching the cooker.
4. You can substitute the cocoa powder with 2 tbsp of vanilla essence to make a vanilla cake. Feel free to add in any other flavours or even colour.
Remember, a pressure cooker is not meant for baking or using in the manner described above. Consider that before using it to make your cake. Be careful while handling it, and don't forget to have a little fun too.
