While tomatoes are widely used to flavour curries and vegetables, this tangy fruit can be used more than just acting as a base for dishes. Or even salads!

We got 5 interesting and offbeat recipes for you to make with tomatoes.

Tomato pickle

Indians love pickles. The best part is that we enjoy making pickles every season without fail. And mango, lemon and chilli are our favourites. But sometimes pickle experiments are good. How about making pickles out of tomatoes?

To make this pickle, wash and chop the tomatoes and keep aside. In a hot pan, add oil and tomatoes. Cook for about 2 minutes and then add tamarind pulp, salt, curry leaves, chilli powder, fried red chillies, chopped garlic and asafoetida. Mix well for another 2 minutes and take off the heat. Serve once cool.

Tomato Spice Muffins

As much as we love chocolate chip and raisin muffins, we love these too especially for breakfast.

In a large bowl, whisk together flour, sugar, baking powder, ground cinnamon, pepper and nutmeg. To this, add in eggs, butter and tomato puree. Combine well. Fill paper-lined muffin cups with the batter and bake until a toothpick comes out clean. Let them cool and eat up.

Tomato Dosa

While dosas are pretty good just as they are, a little twist never hurt anyone.

For this, take some ready-made dosa batter and mix in finely chopped or pureed tomatoes, cumin powder, salt, chopped coriander and chilli powder. Mix this well and pour it on a well-greased heated pan to make your dosa. Serve hot with your favourite chutney.

Tomato and Peach Salsa

There is nothing better to dip your nachos than this quick tomato and peach salsa. To make it, finely chop and mix together tomatoes, onions, bell peppers and peaches. Add chopped coriander, lemon juice, cumin powder, pepper and salt. Toss well and serve. This is a great dip for parties too.

Tomato Barfi

This barfi makes for quite a treat for everyone with a sweet tooth. In a heated pan, add in sugar and water and stir until the sugar dissolves. Once it is thick in consistency, add in tomato puree, powdered cashews and almonds and flour. Mix until it thickens and then add ghee and cardamom powder. Transfer into a well-greased container and let it cool. Cut and serve.
