Aditi Dugar on her inspiration, love for flavour, local ingredients and more
For home chefs and aspiring foodpreneurs, the CEO of Masque, Mumbai gives her own take on the culinary world and shares tips that will help you make it big.
An inspiration to many across the country, self-taught cook Aditi Dugar shares her best piece of advice, “Don’t be afraid to take risks. It’s always smaller steps to a bigger vision.” She followed the same when she left a four-year career in finance to pursue her passion for cooking by launching a niche catering company with her mother. Little did she know, she was going to take the culinary world by storm.
Her journey started when she was 16 and discovered a love for baking, which ultimately led her to refine her talents in London’s two-Michelin starred Le Gavroche and La Petite Maison. Aditi recalls, “Every meal that my grandmother and mother put out was always robust in flavour. I always thought that if I became a chef, that’s the kind of meal that I’d feel proud of.” It is her love for flavour and fine dining that gave birth to renowned Mumbai based restaurant, Masque, which she co-owns with Chef Prateek Sadhu. The highly ambitious duo share the same vision for championing local ingredients and creating sustainable dishes.
