Mango Pudding with Chocolate Ganache
Heat mango pulp in a pan. Add gelatin, switch off the gas and mix well. Keep it aside to cool. In a big bowl, add egg whites and beat them well. Add sugar in batches and keep whisking it till it becomes soft and fluffy. Mix the mango pulp and meringue together.
Fold the mixture well and then add the whipping cream in it. Mix the ingredients well. To serve, add a crumbled vanilla sponge as the base, then add the the mango pudding and top with chocolate ganache.
Bengali Aam Kheer
This is nothing but mango rabdi - and it tastes absolutely divine. After all, Bengalis have mastered the art of preparing sweets. To prepare, heat mawa and condensed milk until the mixture melts. Pour into a glass and mix in chopped mango. For an interesting variation, blend with mango puree instead.
Mango Chena Barfi
This one's for the barfi lovers. Heat a pan and add mango pulp and sugar. Mix well. Once it comes to a boil, add grated paneer. Sprinkle almonds and pistachios and mix it well. Once cooked, switch off the gas and cool the mixture. Later, roll into balls. Top the barfis with pistachios and almonds and serve.
Mango Cheesecake
Love cheesecakes? They taste even more irresistible with mango. Crush biscuits to prepare the crust. For the cheesecake, take cottage cheese, powdered sugar, cinnamon powder, chopped ripe mangoes, cream and 3 eggs in a bowl and whisk. Layer this mixture over the biscuit crust and bake.
Mango Cream
This one is ridiculously easy to make. Chop a ripe mango and beat it with some honey. Set aside. Blend some whipped cream and powdered sugar. Pour over the mango puree and mix well. Serve in a cocktail glass, topped with mint sprigs and chopped mangoes.
