When you think of the life of an editor heading of a food publication, it's natural to think that there is a lot of food involved. And sure, there is. But sometimes, there is also a lot of food that you can't eat. That is kind of what happened during our five-episode Ramadan special show #IBelieveInKorma, that features four mutton dishes, followed by one loaded with dairy. But that didn't stop me from getting enthusiastic about showing you how to get each of these iftar classics right. After all, it allowed me to pick the brains of five talented young chefs. That I also got to cook with five of my friends, was an added bonus, like the almond slivers donning our Pao no Halwo. (Yes, it's a subtle push to watch our latest episode with chef Insia Lacewalla, which you must check out as soon as you're done reading this).
What's interesting is that I am not the only one who's vegan, vegetarian and all-things plant-based this season. As if the entire menu at the Emmy Awards 2020 being vegan was not enough, even Eleven Madison Park is coming back after a long hiatus with a fully plant-based menu, as New York slowly opens up in a post-pandemic world.
