Spinach, Corn and Cheese Breakfast Cups

Corn is every child’s all-time favourite ingredient and so is cheese. Put these two together in the form of Muffins, with a healthy dose of spinach, and they’ll finish it up in no time. Kissan Fresh Tomato Ketchup gives the healthy muffins a fun flavour and makes it super tasty to munch on!

Ingredients

  1. Refined flour (maida): 2 tablespoons
  2. Whole wheat flour (atta): 1 cup
  3. Ground oats: 2 tablespoons
  4. Corn flour (makkai ka atta): 2 tablespoons
  5. Baking powder: 1 teaspoon
  6. Baking soda: ½ teaspoon
  7. Grated cheddar cheese: ¼ cup
  8. Sweet corn kernels: ½ cup
  9. Chopped spinach: 1 cup
  10. Egg: 1
  11. Kissan Fresh Tomato Ketchup: 3 tablespoons
  12. Skimmed milk: 1¼ cup
  13. Salt to taste
  14. Black pepper to taste
  15. Olive oil: 1 ½ tablespoons

Method of Preparation

  1. Preheat the oven at 180°C
  2. Take a mixing bowl, add all the dry ingredients and mix it well. Keep it aside
  3. In a separate bowl, add all the wet ingredients and Kissan Fresh Tomato Ketchup. Mix it well
  4. Now add the wet mixture to the dry mixture and combine it using a spoon, ensuring there are no lumps.
  5. Fill muffin cases with the mixture until half way up. Bake it until the tops are golden brown and a skewer inserted in the centre comes out clean.
  6. Pack these healthy muffins in your child's tiffin box
