Banana, Oatmeal and Dried Fruit Muffins

It’s no secret that kids love muffins. Well, we’ve made them healthier! Make these nutritious Banana Oatmeal Muffins with the goodness of Kissan Strawberry Blast Jam and give your children a fun way to eat right!

Ingredients

  1. Whole wheat flour (atta): ¾ cup
  2. Plain flour (maida): ¼ cup
  3. Bran/Chokar (achieved by sieving whole wheat flour and using the sawdust-like remnant): ¼ cup
  4. Oats: 1 cup
  5. Egg: 1
  6. Brown powdered sugar: 2-3 tablespoons
  7. Kissan Strawberry Blast Jam: 2 tablespoons
  8. Baking powder: ½ teaspoon
  9. Baking soda: ¼ teaspoon
  10. Mashed ripe bananas: 1 cup
  11. Vegetable oil: ¼ cup
  12. Skimmed milk: ¼ cup
  13. Salt to taste
  14. Chopped mixed dried fruit: ¼ cup
  15. Vanilla essence (optional): 1 teaspoon

Method of Preparation

  1. In a mixing bowl, place the atta, maida, bran, oats, baking powder and baking soda along with salt. Mix well. Tip in the dried fruit and mix again. Keep aside.
  2. In a separate bowl, add the egg, sugar, oil, Kissan Strawberry Blast Jam, ripe bananas, milk, and vanilla essence and whisk together until well combined
  3. Now add the wet mixture to the dry and mix gently
  4. Spoon into muffin moulds until half way up
  5. Bake the muffins at 170°C for 15-20 minutes or until the tops are a golden brown, the muffins have risen and a skewer inserted in the centre comes out clean.
  6. Cool the muffins on a wire rack and pack with a sandwich and cashew for sides.
